Easy Food Prep during a Storm, plus a recipe for Tuna, White Bean and Red Onion Salad

One of my go to options during storms, hurricanes and potential power outages is tuna.  Try this recipe for a different twist on tuna salad! Really good if you only have the tuna, Cannellini beans and red onion as well.  You can make this recipe without having to open the refrigerator for any of the ingredients.  Hope you are safe and sound over the next few days!

Tuna, White Bean and Red Onion Salad

Ingredients:

  • 2 cans chuck light tuna packed in water, drained
  • 1 can white beans (Cannellini)
  • 1 red bell pepper, diced
  • ¼ red onion, sliced thinly
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • Optional: Parsley, tomatoes, spinach

Preparations:

  1. Mix all ingredients together and chill for at least 4 hours.
  2. Serve on bed of greens or whole wheat bread

Nutrition Information: 193 cal, 4.3 gr fat, 29.1 mg cholesterol, 346.5 mg sodium, 20.4 gr carbohydrate, 22.6 gr protein
